Taco Salad with Cilantro-Lime Dressing

2 pounds ground beef
2 (1.25 oz) packages taco seasoning mix
1 1/2 cups of water
1 avocado
Juice from 1 lime
1 head of lettuce, shredded
1 (15 oz) can of red kidney beans, drained
4 tomatoes, chopped
2 cups grated cheddar cheese
1 (10 oz) package of Fritos corn chips or 6 flour tortillas
1 recipe Cilantro Lime Dressing (see below)

Brown ground beef in a large skillet. Stir in taco seasoning mixes and water. Simmer, stirring occasionally, for about 15 minutes or until water is absorbed. Chop avocado. Squeeze juice of lime over chopped avocado; carefully stir to coat. Place ground beef, avocado, lettuce, kidney beans, tomatoes, cheddar cheese, and corn chips in separate bowls. Let each person make their own salad beginning with corn chips on a plate. Or, if using tortillas, brush each side with oil and briefly cook in a skillet until lightly browned on each side. Place the tortilla in a large individual bowl. Top with other ingredients and desired amount of Cilantro-Lime Dressing. Makes 6 servings.

Cilantro-Lime Dressing

1 (1 oz) packet ranch dressing mix
1 cup mayonnaise
1 cup sour cream
1 (3 inch) jalapeno pepper, cut and seeded
2 tablespoons chopped onion
1/3 cup chopped cilantro
Juice of 1 lime

Blend all ingredients in blender. Enjoy!!!
