Mint Macaroons

2 egg whites
1/4 cup sugar
1 teaspoon vanilla
1/4 cup chopped fresh mint
4 cups shredded coconut

Whisk egg whites, sugar, vanilla, and mint until frothy.  Fold in coconut.  Scoop on parchment lined baking sheet and bake 300 degrees for 25 minutes until lightly golden.  Cool and serve.
