Aunt Norma's Peta Bread

3 & 1/2 to 4 cups flour
1 pkg. yeast or 1 tablespoon yeast
1 & 1/4 cup warm water
2 tablespoons cooking oil
1 teaspoon salt
1/4 teaspoon sugar

Combine 1 & 1/2 cups flour with dry yeast. Mix water, oil, salt, and sugar and add to flour and yeast mixture. Mix with Kitchen Aid Mixer on low for 30 seconds and then on higher speed for 2 minutes. Stir in rest of flour to make a medium stiff dough. Knead for about 5 minutes. Cover and let rise for 45 minutes. Punch down and shape into 12 balls. Cover and let rest for 10 minutes. Roll balls into 5" rounds. Roll dough from center out. Put on ungreased cookie sheet. Cover and let rise 20 - 30 minutes. Bake at 400 degrees for 10 - 12 minutes.
