Danish Ebleskivers

2 tablespoons sugar
3 eggs
3 cups buttermilk
1 teaspoon vanilla
3 cups flour
1 & 1/2 teaspoon soda
1/2 teaspoon salt
1/2 teaspoon baking powder
6 tablespoons oil

Mix liquid ingredients together. In a separate bowl, mix dry ingredients together. Add the liquid ingredients to the dry and add oil at the very end. Cook in an ebleskiver pan that is hot and sprayed with pam. You can put chocolate chips, fruit, or nuts in the middle of each ebleskiver at the very beginning of cooking. Turn 4 times to make a nice round cake ball. Sprinkle with powder sugar after putting on a serving plate. Look for pictures in your local Williams and Sonoma store along with an ebleskiver pan.
