Homemade Rolls

1 Qt. scalded milk (milk is heated to just before boiling point)
1 cup sugar
2-3 eggs beaten
1/2 cup melted shortening
2 Tablespoons yeast dissolved in 1/2 cup very warm water with 1/2 teaspoon sugar
1 Tablespoon salt
1 Tablespoon vinegar
12 cups flour ( about)

Combine scalded milk, sugar, salt, and shortening and cool to warm. Stir in yeast. Add eggs and flour to make a sponge. Let sit 10 min. Add vinegar and the rest of the flour a cup at a time to make a stiff dough. Knead 10 minutes and put in greased bowl. Cover and let rise until double in size. Punch down and let rise again. Make into rolls about the size of golf balls and place in a buttered 9x13 casserole dish and cover lightly with plastic or wax paper. Rolls should be fairly close in the pan. There should be enough dough to make 3 pans of rolls - about 60 rolls. So you should have about 20 rolls per pan. Let rolls rise again until double in size.
