Raspberry Bars

3/4 cup butter
1 cup packed brown sugar
1 & 1/2 cup flour
1 & 1/2 cup rolled oats
1 teaspoon salt
1/2 teaspoon baking soda
1 10 oz. jar jam - raspberry, strawberry, peach, or blueberry. They all work well!

Mix well together the first 6 ingredients. Mixture will be crumbly. Pat half of the mixture into a 9 x 13 baking dish. Press down firmly to create a crust. Spread the jam over the crust mixture. Crumble the rest of the flour mixture over the top. Bake at 375 degrees for 25 - 30 minutes. I have changed the temperature, because the sides don't get so hard and Evan likes it better when it is cooked this way!

  1. I have found that a full cup of butter works better for me. Mine are just too crumbly if I only do 3/4 cup of butter. Just thought I would share. :)
