2 cups flour
Reserve 1/4 cup of flour to dredge berries
3 teaspoons baking powder
1/2 teaspoon salt
1/3 or 1/2 cup sugar - Mrs. D uses 1/2 cup
1 or 2 eggs
1 cup milk
4 Tablespoons butter melted
1 cup blueberries dredged in 1/4 cup flour
Mix dry ingredients and make a well in the center. Pour in milk, eggs, and melted butter and stir until blended. Do not over mix. Fold in blueberries and rest of flour.
Spoon into muffin tin to about 3/4 full. Bake at 400 for 15-20 minutes until golden brown.
Take them to the beach on the 4th of July and enjoy!
