Red Velvet Cake

RED VELVET CAKE

1/2 cup butter
1 & 1/2 cups sugar
2 eggs
1 oz bottle red food color
2 teaspoons vanilla
1 teaspoon salt
2 & 1/4 cups flour
2 Tablespoons cocoa
1 cup buttermilk
1 Tablespoon vinegar
1 teaspoon soda
Cream butter and sugar together.  Add eggs and beat well.  Add food coloring and vanilla.
Sift together flour, salt, and cocoa.  Add to sugar mixture.  Mix well.  Mix buttermilk, vinegar and soda in large bowl.  It will expand.  Fold into batter.  Pour into greased and floured 8" round cake pans.  Bake at 350 degrees for 25 minutes.

ICING:
1 cup milk
1/4 cup flour
1/4 teaspoon salt
Mix together and bring to simmer over medium heat, stirring constantly until thick.  Set aside and let cool to room temperature.
1 cup sugar
1 cup butter
1 teaspoon vanilla
Beat sugar, butter, and vanilla until fluffy.  Add cooled milk mixture and vanilla and beat again until it looks like whipped cream.  Cut layers in half making 4 layers.  Spread frosting between layers and on top and add sprinkles for Brandon!
